  • 1 tsp Olive oil
  • 1/4 tsp Turmeric powder
  • 1 Clove of Garlic
  • 1 Small handful of Coriander leaves (or, baby spinach leaves)
  • 3 Eggs
  • 50 mls Milk (or non-dairy alternative)
  • 1 Pinch of Salt
  • 1 Pinch of Black pepper (helps your body absorb the natural antidepressant properties of the Turmeric)
  • 2 slices of Sourdough (or your favourite alternative)


  • Finely chop the garlic.
  • Finely chop the coriander (or baby spinach) leaves.
  • Whisk eggs, milk, turmeric, salt and black pepper together until mixed well.
  • Heat the olive oil in a non-stick fry pan over a medium heat.
  • Lightly fry the finely chopped garlic until aromatic.
  • Add the coriander (or baby spinach) leaves and cook until wilted.
  • Add the egg mixture to the pan and cook for approx. 5-8 minutes or until the scrambled eggs are at your preferred consistency.  Stir regularly. 
  • Serve on toasted Sourdough (or, your choice of tasty bread!)
